Coconut Chicken Soup

The sniffles have arrived at our house. Chicken soup is of course, Mom’s best remedy. I have stepped out of my box this time and tried something a bit different, Coconut Chicken Soup. It’s quick and easy.

All you need is frozen 3 large chicken breasts, fresh ginger, coconut milk, lime juice, olive oil, chicken broth, and hot chilies or red pepper flakes.

First I cubed the chicken breasts, they were slightly frozen for easier cutting. This particular brand had a bit of seasoning on them, but I usually buy the plain variety.
Drizzle a bit of olive oil in the pan and add the chicken. Saute until brown about 5 minutes.
Add about 1″ of sliced ginger.
You could also grate the ginger if you don’t like the chunks.
I love the smell of fresh ginger. Don’t you?
Then I added 4 cups coconut milk, 2 cups chicken broth and 4 tablespoons of lime juice. Put the lime in the coconut and drink it all down! Wasn’t that a Seseme Street song?
Anyway, I used the pre-mixed brand of coconut milk, you could also use canned coconut milk. Stir over medium heat until warm. Add 1 or 2 crumbled hot chilies or sprinkle with red pepper flakes to taste.
