I just know there is a new computer in my future. They only thing is it can’t happen soon enough. I am on a tight budget, and when your on a tight budget you may do desperate things. Like feed your family the same boring thing over and over. Well, this week we revived our Easy Tomato Soup recipe. It’s a breeze, and falls well into the Recipes for the Super Thrifty Food Budget. Here’s what to do:
Start with a big can of tomato puree. I buy in bulk, so for our family of 6, I use 1/2 of this 106 oz. can. I buy the cans at Costco for $2.49 each. They are the best deal in town, I use them for so many things! Leftovers can be frozen in smaller containers for later use.
You will also need powdered chicken broth, milk or water, salt, pepper and a bit of parsley or basil.
In a large stock pot, add the tomato puree (about 6 cups), 2 tablespoons chicken broth seasoning, 2 cups milk (for creamy tomato soup) or water. Then season with the salt and pepper to taste, sprinkle with parsley or basil. Heat until warm and serve. How easy is that?
Our favorite way to serve it is with grilled cheese sandwiches on the side. It’s a classic meal. You’ll be one step closer to mastering your food budget!
