I had an important meeting last night. It involved chocolate and coffee.
It was a meeting of the Moms. We shared our favorite chocolate treats, sipped coffee and talked “Mom” for hours.
The conversation revolved around kids, schoolwork, grocery shopping, homeschool schedules, and the like.
Of course, the most important ingredient was the support and friendship in the room.
And the chocolate.
I went to this meeting with a full pan of Chocolate Oatmeal Bars. Well, almost full.
My son decided to try one to be sure that they were worthy of sharing.
I am blessed to have a child with such a distinguished pallet!
They must have been good because I came home with nearly an empty pan. I love empty pans, they mean that your recipe was a success!
I have made these bars for years, experimenting with various ingredients. This recipe is easy to make gluten free, you would never know they are good for you!
Do not be deceived, however, these are not low calories bars. Nothing really delicious is if you ask me.
Here’s what you’ll need:
3 cups old fashioned oatmeal
2 cups gluten free baking mix
1/2 cup flax seed meal
1 tsp. baking soda
1 cup butter
1 cup brown sugar
1 cup white sugar
12 oz. bag of chocolate chips
1/2 cup butter
1 can sweetened condensed milk
Cream butter (1 cup only), eggs, sugars, oats, baking mix, flax seed and baking soda. Press 2/3 of mixture into greased 9 X 13 pan. Melt rest of butter, milk and chocolate over medium heat until combined. Pour over crust. Crumble rest of dry ingredients over the top. Bake 30 minutes at 350 degrees.
Make a batch to share with your friends. Great things will happen!
