Pumpkin Cheesecake Family Recipe

If you are new to my blog, you may not know our family history. My husband’s family has been in the cheese business here in Wisconsin for more than 40 years. This cheese cake is a seasonal favorite at our family’s Cheese House restaurant. It never fails to disappoint!

The secret, is that it’s very easy to make. This is one of those treats where you don’t look at calories or worry about fat content. Because, if you do, the experience is not the same. This is not your average cheesecake, but cheesecake for the hearty appetite. You can thank me later!

We have sampled cheesecakes at different restaurants over the years, but let me tell you this one puts them all to shame. Even the Cheesecake Factory can’t compare to this.

No Fail Pumpkin Pie Cheesecake Recipe

Ingredients

  • 1 1/2 lbs. real cream cheese (full fat)
  • 3 eggs
  • 2 cups sugar
  • 16 oz. sour cream
  • 2 tsp. vanilla
  • 16 oz. can of spiced pumpkin pie filling
  • Chopped hazelnuts for topping
  • 2 cups crushed graham crackers
  • 1/2 cup melted butter

Instructions

  1. Let all ingredients come to room temperature before beginning.
  2. Cream the cheese, eggs and sugar.
  3. Add sour cream.
  4. Combine graham crackers with the melted butter. Spread mixture in the bottom of a 13 x 9" pan.
  5. Bake crust for 5 minutes in 325 degree oven.
  6. Open oven and pumpkin/cream cheese mixture over the hot crust.
  7. Bake 25-35 minutes until brown. Test for doneness by gently shaking the pan, if the cake is firm it is cooked. If the cake is wiggly in the center, it needs to cook longer. Remove from oven when cooked.
  8. Cool before serving, add chopped nuts to top of cake if desired. Store in refrigerator, or cut into pieces and store in freezer for up to 6 months. Serves 10-12 people.

Why You Need This Cake

I am a health nut and most of the time we eat extremely healthy diet. However, there are days when I just want to eat a CAKE and not worry about all that other stuff. What’s the point of eating healthy all the time when you can’t enjoy a little treat now and then? This cake is that treat, easy to make, inexpensive and quick to bake. It’s not gluten free, sugar free, calorie free, or even organic. But it sure tastes good! Especially with fresh whip cream, just saying’!

Strawberry Rhubarb Cake with Three Ingredients

Ingredients

  • 1 box of yellow cake mix ( plus water or oil and eggs as directed on the box)
  • 1 small box of strawberry jello
  • 4 cups fresh or frozen rhubarb
  • Fresh strawberries or cream for topping (optional)

Instructions

  1. Mix cake mix according to package directions.
  2. Grease a 13" x 9" pan.
  3. Clean rhubarb, remove leaves. Chop into 1" pieces. Place in bottom of greased pan.
  4. Pour 1/2 of the strawberry jello powder on top of the rhubarb.
  5. Pour cake mix on top of the rhubarb mixture.
  6. Sprinkle remaining powdered jello on top.
  7. Bake at 350 degrees for 35 minutes or according to cake mix directions. Enjoy!

We recently discovered the Secrets of the Snickerdoodle Cookie. I have been cooking my way through a number of new recipes. This is the first batch of Snickerdoodles we have ever made and it definitely won’t be our last. This classic cookie is sure to become one of your family’s go to favorites.

Snickerdoodles are basically a sugar cookie with lots of spices, and a delightful pecan on top. We found a secret combination of spices that make this cookie completely unique. They will melt in your mouth!

Secrets of the Best Snickerdoodle Cookies

Ingredients

  • 3 cups Sugar
  • 5 1/2 cups all purpose Flour
  • 1 cup butter, softened
  • 4 eggs
  • 2 teaspoons vanilla
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons Nutmeg
  • 1/2 teaspoons finely ground Cloves
  • 3 teaspoons Cinnamon

Instructions

  1. •Combine butter and 2 cups of sugar.
  2. •Add vanilla, eggs and cream of tartar.
  3. •Add baking soda and salt.
  4. •Roll dough into 1" balls.
  5. •Roll balls in mixture of 1 cup sugar, cinnamon, nutmeg and ground cloves.
  6. •Place balls on greased cookie sheet.
  7. • Press each ball slightly with the bottom of a glass until flattened. Add a Pecan half into the top of each cookie.
  8. •Bake at 375 degrees for 10-12 minutes.

Yield is 5 dozen cookies.

Lemon and Lavender Sugar Cookies

This Lemon and Lavender Sugar Cookie recipe is my latest obsession. Not only is it easy to make, but completely delicious. It even smells amazing with the lavender herbs. The Meyer Lemons are my favorite and seem to have the most powerful flavor and scent. They are also a rich deep yellow color. How could you not love them?

Lemon and Lavender are often used together in European cooking from Italy or France. I have seen recipes for ice cream, cakes, roast chicken and more. My family was anxious to try these new cookies and they have become one of our new favorites.

Lavender Sources

This recipe calls for a bit of dried fresh lavender. You can find this edible herb at specialty herb or gourmet shops. Amazon also carries it stock. If you have it growing in your garden you can use that instead, as long as it’s organically grown without pesticide.

Lemon Lavender Sugar Cookies

Lemon Lavender Sugar Cookies

Ingredients

  • Cookie Ingredients:
  • 1/2 cup granulated sugar
  • 1/2 honey
  • 1 cup powdered sugar
  • 1 cup softened butter
  • 1 cup softened coconut oil
  • 2 eggs
  • 4 1/2 cups flour
  • 2 Tablespoons grated lemon zest
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons crushed lavender blossoms
  • Icing Ingredients:
  • 2/3 cup powdered sugar
  • 2 Tablespoons fresh lemon juice

Instructions

  1. Combine sugars, honey, butter, coconut oil and eggs in a large bowl.
  2. Mix well.
  3. Add flour, lemon zest, cream of tartar, baking soda and salt.
  4. Stir until combined.
  5. Fold in crushed lavender blossoms. Combine.
  6. Roll dough into 1" balls, place on greased cookie sheet.
  7. Flatten balls into 2" rounds with the bottom of a drinking glass, preferably one with a patterned bottom.
  8. Bake at 350 degrees for 12-13 minutes or until golden brown.
  9. Remove from oven, let cool 5-7 minutes.
  10. Make icing by combining powered sugar and lemon juice in a small bowl with a spoon.
  11. Stir until smooth, drizzle icing over warm cookies.
  12. Makes 3-4 dozen.

Quick and Easy Peanut Butter and Oats

 

Our family loves cookies. We make a batch or two each month for different occasions. This Peanut Butter Oatmeal recipe is one of our go to family favorites, as it pleases all the appetites in our household. Some of us like Peanut Butter, some like Oatmeal and when you put the two things together you have an instant recipe for success. My Peanut Butter Oatmeal version also has some coconut for a bit of the sweet taste, and dried cranberries for the sour palette. Our kids fight for the cookies with the most cranberries in them, proof of a winning recipe!

Recipe Notes

This Peanut Butter Oatmeal recipe makes a large batch, as much as this is great for a big family, it may be too much for a small one. However, if you have leftover cookies, bag them by the dozen in zip-lock freezer bags and store them for future use. My kids are forever forgetting to tell me when it’s their turn to bring a treat to soccer, youth group, choir or any of their other activities. With a couple of bags of homemade cookies in the freezer, I am almost always prepared for those last minute treat requests. In addition, this saves me both time and money not having to make any last minute trips to the grocery store to purchase treats!

Ingredients

  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup butter, softened
  • 1 cup chunky or creamy peanut butter
  • 3 eggs
  • 1 cup flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. vanilla
  • 1 cup sweetened coconut flakes
  • 3 cups rolled oatmeal
  • 2 cups dried cranberries
  • 1 cup sweetened coconut flakes
  • 3 cups rolled oatmeal
  • 2 cups dried cranberries

Instructions

  1. • First of all cream sugar and butter in a large bowl until smooth. Add peanut butter, vanilla and eggs. Cream together.
  2. •Combine dry ingredients (flour, salt, baking soda) in a medium bowl. Stir into peanut butter mixture a little at a time until combined.
  3. •Finally, add oatmeal, coconut and dried cranberries. Mix well.
  4. •Drop by small spoonfuls onto greased cookie sheets. Bake at 350 degrees for 12-15 minutes until golden brown.
  5. Makes 5 dozen cookies.
