Crock Pot Roast Chicken

There is something so comforting about having a meal ready to eat when you get home. We eat crock pot meals 2 or 3 times a week during the fall and winter season because they are so easy to throw together and taste delicious.

This roast chicken recipe can be made with frozen chicken breasts, whole chicken or even chicken legs and thighs. I look for chicken on sale and stock up when I can find it less than $2.00 per pound. There are several ways to make this dish, I tend to vary it depending on what’s lurking in my refrigerator at the time. Sometimes I use fresh garlic, olive oil and lemon juice, some times I use the bottled salad dressing as listed. Either way it turns out great and your family will love it!

Ingredients

  • 4 lbs. chicken breasts, thighs, or legs (thawed)
  • 1 bottle Paul Newman's Olive Oil Italian Dressing (or 4 cloves chopped garlic, 1/4 cup olive oil and 1/2 cup lemon juice)
  • Green Olives
  • Lemon slices and fresh cilantro for garnish
  • Salt and Pepper to taste

Instructions

  1. Wash and clean chicken.
  2. Add to crock pot.
  3. Pour salad dressing over top of chicken, cover.
  4. Cook on high for 6-7 hours or until chicken is falling off the bone.
  5. Add lemon slices, olives and cilantro for garnish.
  6. Serve hot with your favorite rice or potato dish and cooked vegetable.

We love this dish as leftovers too. You can remove the chicken from the bones and serve it on a salad or in a sandwich with mayo and your favorite veggies.  I cook a large quantity of chicken at a time in this manner, freeze any leftovers and add it to my next batch of homemade chicken soup. Anyway you look at it, it’s easy and fast!

We love this easy sandwich for a hearty lunch or a late night snack. Delicious on a budget and quick to make anytime!

What’s a Monte Cristo?

One of my favorite sandwiches is the Monte Cristo. It’s a french creation, originally called Croque Monsieur.  Rich and satisfying, it is as yummy as it looks! Traditionally served for breakfast this is a popular staple at french cafe’s and is often served with a sprinkle of powdered sugar and jam for dipping.

The high protein in the sandwich here comes from the bread being actually dipped in egg wash like french toast, then grilled to perfection. Load up your griddle with lots of grass fed butter when frying for the best flavor! I use coconut milk or almond milk occasionally for a different set of flavors.

Ingredients

  • White or whole wheat bread
  • Milk (1/3 cup per sandwich)
  • Eggs (1 per sandwich)
  • Slices of Mozzarella or Gruyere Cheese
  • Sliced Deli Ham
  • Butter
  • Powdered Sugar (optional)
  • Jam (optional)

Instructions

  1. Preheat griddle or cast iron frying pan.
  2. Add 1 tablespoon of butter, let melt.
  3. Whip the egg and milk with a fork in a medium size bowl.
  4. Dip the bread in the egg mixture, add to griddle.
  5. Layer the bread with the cheese and ham slices.
  6. Top with another piece of bread dipped in the egg mixture.
  7. Fry the sandwich for 3-5 until brown and cheese is melted.
  8. Turn sandwich and cook the other side until done.
  9. Serve sprinkled with powdered sugar and jam for dipping if desired.

Ingredients

  • 2 cups gluten free baking mix
  • 2/3 cup unsweetened baking cocoa
  • 1 cup coconut or almond milk
  • 1 tsp salt
  • 2 tsp baking powder
  • 1 tsp vanilla
  • 1/2 cup coconut oil or butter
  • 2 eggs, separated
  • Fresh strawberries
  • Maple syrup
  • Whip cream

Instructions

  1. •Preheat waffle iron.
  2. •Combine the baking mix, cocoa, salt and baking powder in medium sized bowl.
  3. •Separate eggs. Combine egg yokes with coconut milk, vanilla, and coconut oil.
  4. •Pour the wet ingredients into the dry ingredient mixture. Combine.
  5. •Whip egg whites until stiff peaks form in blender. Fold into batter.
  6. •Grease the waffle iron with coconut oil or butter. Pour in mixture, bake until done.
  7. •Makes 8 chocolate waffles. Waffles may be frozen and reheated in the toaster or served with ice cream.
