Why You Need This Cake

I am a health nut and most of the time we eat extremely healthy diet. However, there are days when I just want to eat a CAKE and not worry about all that other stuff. What’s the point of eating healthy all the time when you can’t enjoy a little treat now and then? This cake is that treat, easy to make, inexpensive and quick to bake. It’s not gluten free, sugar free, calorie free, or even organic. But it sure tastes good! Especially with fresh whip cream, just saying’!

Strawberry Rhubarb Cake with Three Ingredients

Ingredients

  • 1 box of yellow cake mix ( plus water or oil and eggs as directed on the box)
  • 1 small box of strawberry jello
  • 4 cups fresh or frozen rhubarb
  • Fresh strawberries or cream for topping (optional)

Instructions

  1. Mix cake mix according to package directions.
  2. Grease a 13" x 9" pan.
  3. Clean rhubarb, remove leaves. Chop into 1" pieces. Place in bottom of greased pan.
  4. Pour 1/2 of the strawberry jello powder on top of the rhubarb.
  5. Pour cake mix on top of the rhubarb mixture.
  6. Sprinkle remaining powdered jello on top.
  7. Bake at 350 degrees for 35 minutes or according to cake mix directions. Enjoy!

Summer Fruit Sangria

This light summer cocktail is just the thing for summer entertaining. It’s easy to make with fresh summer seasonal summer fruit. I like to find my fruit at the farmer’s market and make a batch when company comes over. You can use just about any combination of fruit and wine. I have found that reading the tasting notes on the wine bottle gives me suggestions for fruits that pair well with the wine.

Sangria Wines

We have been having regular wine tastings with friends. I highly recommend having a tasting and inviting a bunch of friends to join you. It’s a very relaxing environment and people really enjoy trying out new wines that they have never had before. I will post more on this soon! But for now, sangria is a great way to start your summer entertaining!

Sangria Tips

When you make sangria, be sure to leave the skins on the fruit. Not only does it add extra color and fiber to this delicious treat, but the fruit pairs well with the wine and the combination brings out the flavors of each. I personally believe the skins keep the fruit from browning, but this is more of a theory than fact.  I love this particular recipe with either peaches or nectarines. The raspberries can be frozen ahead of time to chill the wine further with out adding extra ice and watering down the wine if you choose. Either way, it’s delightful!

Ingredients

  • 1 cup peach nectar juice
  • 1/2 cup sugar
  • 1 bottle white Zinfandel Wine
  • 1/4 fresh lemon or lime juice
  • 1 peach thinly sliced
  • 1/2 pint fresh raspberries
  • Mint leaves for garnish.
  • 16-20 ice cubes

Instructions

  1. Combine juice and sugar in small pan. Cook until dissolved over medium heat. Pour into 2 quart container with lid (a large mason jar works well for this). Add wine, lime juice and ice. Garnish with mint leaves.

Choosing the Perfect Wine

We are occasional wine drinkers. I find that having a bottle or two in the pantry is an easy way to be prepared for last minute guests and dinner parties. It’s also a treat to share a glass with my husband on Saturday night after the kids are asleep. It’s called BALANCE.

Years ago we visited the California wine country. It was so beautiful, I would highly recommend it if you haven’t been there. We visited a boutique winery, small but known for it’s incredible red wines. I had never been to a winery before, but I was hooked after that first experience. After the tour and the tasting, we signed up for their monthly wine club. For several years we had incredible wines delivered to our door every month. It was as if we were on vacation each time we drank that wine. We loved it. Unfortunately, this winery is now out of business, and we haven’t been in a wine club since.

How to Choose Your Wines

There are a few basic rules to remember when choosing wines. First, red wine is usually served with red meat.

TIP TO REMEMBER: RED=RED

White wines are usually served with seafood, or poultry.

TIP TO REMEMBER: White = White CHICKEN OR FISH

The temperature of the wine is also a factor in the flavor. Red wines are served room temperature, uncorked for a few minutes before serving so it can “breathe”.

White wines are served cool and crisp. Chill in the refrigerator or in an ice bucket before serving.

Now for the foods: The wine and cheese chart above is a great resource. I printed it for my kitchen so I can have it on hand. Cheeses bring out the flavor of the wine so they make a great combination. For cheese tray directions, read my How to Make a Cheese Tray Post.

Wine, cheese and FRUIT are wonderful together. Fruit balances the cheese and brings out the fruity flavor of the wine. Frozen fruits are a delightful addition to chill your white wine in the glass when serving.

Baked Light Flavored Fish (such as sea bass, flounder, sole, or cod): Pinot Grigio, Chardonnay or Sauvignon Blanc

These waffles are great for anyone with food issues because they are so basic. Gluten free, dairy free and vegan! It’s a win, win, win! I like my waffles best made with coconut oil for a rich flavor.  Serve them with hot maple syrup, fresh strawberries and even whip cream (if you can eat it!) on the side.

Chocolate Gluten Free Waffles

Ingredients

  • 2 cups gluten free baking mix
  • 2/3 cup unsweetened baking cocoa
  • 1 cup coconut or almond milk
  • 1 tsp salt
  • 2 tsp baking powder
  • 1 tsp vanilla
  • 1/2 cup coconut oil or butter
  • 2 eggs, separated
  • Fresh strawberries
  • Maple syrup
  • Whip cream

Instructions

  1. •Preheat waffle iron.
  2. •Combine the baking mix, cocoa, salt and baking powder in medium sized bowl.
  3. •Separate eggs. Combine egg yokes with coconut milk, vanilla, and coconut oil.
  4. •Pour the wet ingredients into the dry ingredient mixture. Combine.
  5. •Whip egg whites until stiff peaks form in blender. Fold into batter.
  6. •Grease the waffle iron with coconut oil or butter. Pour in mixture, bake until done.
  7. •Makes 8 chocolate waffles. Waffles may be frozen and reheated in the toaster or served with ice cream.

Easy Chai Tea Latte

Everyone loves a good cup of tea now and then. If you are not a tea drinker, this recipe will convert you! I have been replacing my morning cup of coffee with this tea because I am trying to cut down on the amount of caffeine that I consume. With this tea, I don’t even miss that morning coffee! The tea is slow brewed for deep rich flavor with a winning combination of spices. Make a big batch because you will want more and more! It’s also delicious iced.

Don’t forget to share it with your family, my teenage boys love it! It’s so much healthier than soda, and very inexpensive to make.

Swoon Worthy Easy Chai Tea Latte Recipe

Ingredients

  • 6 cups filtered water
  • 12 whole cloves
  • 3/4 tsp. ground cardamom
  • 12 whole black pepper corns
  • 3 cinnamon sticks
  • 4 black tea bags
  • 6 1" slices of fresh ginger root, peeled
  • Honey (optional)
  • Coconut Milk (optional)

Instructions

  1. Bring water to a boil.
  2. Add all spices and tea bags.
  3. Turn heat to low, simmer for 15 minutes.
  4. Add Coconut milk, heat 5 more minutes.
  5. Strain through a sieve to remove spices.
  6. Pour into a tall pitcher with ice for iced tea or 6 individual ceramic cups for hot tea.
  7. Serve with honey or enjoy plain.
  8. Makes 6 Servings.

The coconut milk really makes this tea amazing! You can also try Almond Milk, but I highly recommend the coconut milk. There are so many good health benefits to this tea! This combination of spices has been around for ages in the middle east and is known to have benefits such as blood purification, aids in digestion, aids the nervous system, strengthens the bones, and gives you increased energy. Did I mention that it’s low calorie? It is! Honestly, it’s a win, win!
