Homemade Brownies

Brownies are a classic treat. My mother loves them, she constantly bring home brownie mixes from the grocery store. Unfortunately, I hate brownie mix! The mixes are always too sweet and never cook all the way through the middle. In the search for a perfect brownie recipe, I have discovered that less is more. Simple ingredients and bit more fat make for a delicious, satisfying brownie that cooks all the way through.

Ingredients

  • 1/2 cup unsweetened dark cocoa powder
  • 3/4 cup butter
  • 1/2 almond flour or gluten free baking mix
  • 1/3 cup chunky peanut butter or almond butter
  • 1/2 cup sugar
  • 1 tsp. vanilla
  • 1 teaspoon baking powder
  • 1/4 tsp. salt
  • 2 eggs

Instructions

  1. •Preheat oven to 350 degrees.
  2. •Melt butter in shallow pan on low heat. Add peanut butter. Stir to combine until fully melted.
  3. •Combine dry ingredients in a medium size bowl.
  4. •Add butter mixture to dry ingredients, stir by hand until completely combined.
  5. •Grease 8" x 8" square pan. Spread brownie mixture into pan.
  6. *Bake for 30-35 minutes until a toothpick inserted in the center comes out clean. Cool before serving.
  7. •Makes 15-20 small brownies.

It took me years to discover that brownies should only be baked in a metal baking pan. This is critical to baking success. For a long time I used a glass pan, and the brownies were always gooey and never fully cooked in the middle. I alternate gluten free flour with regular flour in this recipe. Honestly, if it has chocolate in it my family never complains. The gluten free option has a slightly different texture but still tastes great. You can easily use either type of flour in this recipe and your family probably won’t even know the difference. Chocolate hides everything!
