Spiced Grape Jam

I haven’t done much canning this year. I don’t seem to be able to do two things at once. Working on the house and cooking just don’t seem to go together. I did take time to make a batch of Spiced Grape Jam, and we have been enjoying it daily. This is an easy recipe for the beginner canner, and would make a great gift for the holidays.

4 lbs. fresh Concord grapes (about 8 cups)

1 cup water

2 large apples, cored and chopped

2/3 cup apple cider vinegar

2 cups sugar

1 tsp. Ground cloves

2 teaspoon cinnamon

8 jelly mason jars, 1/4 pint size with lids and bands

Place washed fruit in a large kettle, add water. Crush fruit slightly with a potato masher. Add vinegar, spices, and the chopped apples. Boil fruit until soft and it begins to loose color, about 15 minutes. Process in a. Food mill to remove skins and seeds. Measure the juice, it should yield about 8 cups. Add 3/4 cup sugar for each cup of juice. Cook over low heat until juice begins to thicken and clings to a test spoon. This can take anywhere from 8-30 minutes. Fill sterilized 1/4 pint jars, leaving 1/4″ headspace. Boil in a water bath for 5 minutes.

Easy Raspberry Freezer Jam

It seems like forever since I have cooked anything. I still haven’t adjusted to our new kitchen space.

Actually it’s the lack of space that bothers me.

However, I was inspired to make some easy Raspberry Freezer Jam today.

My in-laws had a bumper crop of berries this year and gave us some of their extras.

They are amazingly delicious.

We have had them on pancakes, in muffins, and in smoothies.

But, there are only so many ways to eat them, until you have eaten all you can hold.

I didn’t feel like spending my entire day in the kitchen canning, so I whipped up a batch of easy freezer jam.

It’s super easy to make. These little pint size Ball plastic freezer containers make it easy to freeze without having to boil a bunch of glass mason jars. You can find them in your local canning department at Walmart or even the grocery store. I use them for lots of things, but they are really made for freezing jam.

To make the Raspberry Freezer Jam you will need the following ingredients:

8 cups fresh or frozen raspberries or other berries

2 cups sugar

2 Tbsp. fruit pectin

2 Tbsp. fresh or bottled lemon juice

4-6 pint sized freezer containers

1. Add the fruit to a large saucepan. Crush with a potato masher. Add the pectin to the sugar, blend with the fruit and the lemon juice.

2. Bring to a boil for 2 minutes, stirring constantly.

3. Fill plastic containers using a ladle, leaving 1″ headspace.

4. Let cool until just warm to the touch before storing in the freezer.

Serve on pancakes, toast, ice cream, or add to smoothies and protein drinks.

Mason Jar Gifts (Repost)

It’s been a difficult summer so far for the garden. The last few weeks have brought heavy rains in our area and most folks are finding their crops to be late.

Things are too wet, and too cool here as well.

Our new location doesn’t have a vegetable garden at all. I am greatly missing the beautiful garden we had last year.

I am planning a new one for next season.

For those of you that will have good crops this year, here’s the links to my 31 Days of Mason Jar Gifts series I did last year.

Some of the projects are canning, some of them are crafts.

All are a great way to fill your pantry for the gift season, coming soon.

Meanwhile I am off to the Haven Conference.

I can’t wait to tell you all about it!
