Secrets of the Snickerdoodle Cookie

We recently discovered the Secrets of the Snickerdoodle Cookie. I have been cooking my way through a number of new recipes. This is the first batch of Snickerdoodles we have ever made and it definitely won’t be our last. This classic cookie is sure to become one of your family’s go to favorites.

Snickerdoodles are basically a sugar cookie with lots of spices, and a delightful pecan on top. We found a secret combination of spices that make this cookie completely unique. They will melt in your mouth!

Secrets of the Best Snickerdoodle Cookies

Secrets of the Best Snickerdoodle Cookies

Ingredients

  • 3 cups Sugar
  • 5 1/2 cups all purpose Flour
  • 1 cup butter, softened
  • 4 eggs
  • 2 teaspoons vanilla
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons Nutmeg
  • 1/2 teaspoons finely ground Cloves
  • 3 teaspoons Cinnamon

Instructions

  1. •Combine butter and 2 cups of sugar.
  2. •Add vanilla, eggs and cream of tartar.
  3. •Add baking soda and salt.
  4. •Roll dough into 1" balls.
  5. •Roll balls in mixture of 1 cup sugar, cinnamon, nutmeg and ground cloves.
  6. •Place balls on greased cookie sheet.
  7. • Press each ball slightly with the bottom of a glass until flattened. Add a Pecan half into the top of each cookie.
  8. •Bake at 375 degrees for 10-12 minutes.

Yield is 5 dozen cookies.

Lemon and Lavender Sugar Cookies

This Lemon and Lavender Sugar Cookie recipe is my latest obsession. Not only is it easy to make, but completely delicious. It even smells amazing with the lavender herbs. The Meyer Lemons are my favorite and seem to have the most powerful flavor and scent. They are also a rich deep yellow color. How could you not love them?

Lemon and Lavender are often used together in European cooking from Italy or France. I have seen recipes for ice cream, cakes, roast chicken and more. My family was anxious to try these new cookies and they have become one of our new favorites.

Lavender Sources

This recipe calls for a bit of dried fresh lavender. You can find this edible herb at specialty herb or gourmet shops. Amazon also carries it stock. If you have it growing in your garden you can use that instead, as long as it’s organically grown without pesticide.

Lemon Lavender Sugar Cookies

Lemon Lavender Sugar Cookies

Ingredients

  • Cookie Ingredients:
  • 1/2 cup granulated sugar
  • 1/2 honey
  • 1 cup powdered sugar
  • 1 cup softened butter
  • 1 cup softened coconut oil
  • 2 eggs
  • 4 1/2 cups flour
  • 2 Tablespoons grated lemon zest
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons crushed lavender blossoms
  • Icing Ingredients:
  • 2/3 cup powdered sugar
  • 2 Tablespoons fresh lemon juice

Instructions

  1. Combine sugars, honey, butter, coconut oil and eggs in a large bowl.
  2. Mix well.
  3. Add flour, lemon zest, cream of tartar, baking soda and salt.
  4. Stir until combined.
  5. Fold in crushed lavender blossoms. Combine.
  6. Roll dough into 1" balls, place on greased cookie sheet.
  7. Flatten balls into 2" rounds with the bottom of a drinking glass, preferably one with a patterned bottom.
  8. Bake at 350 degrees for 12-13 minutes or until golden brown.
  9. Remove from oven, let cool 5-7 minutes.
  10. Make icing by combining powered sugar and lemon juice in a small bowl with a spoon.
  11. Stir until smooth, drizzle icing over warm cookies.
  12. Makes 3-4 dozen.

Your family will love this Must Have Ultimate Chocolate Chip Cookie recipe. For years I only used the Chocolate Chip Cookie recipe that came on the back of the bag of the chocolate chips. You know what I mean? I just figured it was the best. Wrong! One day I experimented with some new ingredients, and found something better! We never went back to the old way of making chocolate chip cookies! Most of all, butter and sour cream give this cookie a delightful light texture (it’s a secret, don’t tell your family what’s in it!). You may want to make an extra batch to put in the freezer for last minute treats when friends come to visit.

Chocolate Chips are Comfort Food

Chocolate chip cookies disappear faster at our home than you can imagine! Seems like I can make a batch of fresh cookies, leave the room while they are cooling, and come back to an empty table. It’s true! In addition, this recipe has become one of our family kitchen staples. It’s probably the easiest cookie to make and produces a winner that everyone will love. The noteworthy secret ingredient is the addition of sour cream. We prefer to use the dark chocolate chips, our favorite brands include either Ghirardelli or Hershey’s Special Dark chocolate chips. Either brand will work, or you can use your favorite. In addition, you can add walnuts if you have them on hand. Trust me, seems like after have had these cookies there is no going back to a regular recipe!

Must Have Ultimate Chocolate Chip Cookies

Ingredients

  • •2 sticks of softened butter, 1 cup total
  • •1 cup sugar
  • •1 cup brown sugar
  • •4 eggs
  • •1 cup sour cream (if you are dairy free you can substitute the soy variety)
  • •4 1/2 cups flour
  • •1/2 tsp. salt
  • •2 tsp. baking soda
  • •1 package dark chocolate chips
  • •1 1/2 cups chopped walnuts (optional)

Instructions

  1. •Cream butter and sugar
  2. •Add eggs, cream until fluffy.
  3. •Combine with sour cream, mix well.
  4. •Slowly add flour, salt, soda. Mix again.
  5. •Stir in chocolate chips and nuts if desired.
  6. •Drop by scant tablespoons onto a greased cookie sheet.
  7. Bake at 375 degrees for 10-12 minutes. While cookies are cooling on a wire rack, you can pack some of them in freezer bags. These cookies keep frozen for up to 6 months. Recipe makes 4 dozen cookies.

Molasses Cookies are always a hit at our house. We enjoy making them for just about any occasion.  I must admit I love to serve them with strong black coffee for dunking. This recipe is fun for kids to help in the kitchen.  They love the feel of the dough in their hands as it is rolled. Rolling the molasses cookie balls in course organic sugar is my preference. You can use regular granulated sugar as well. The coarse unprocessed organic sugar variety seems to hold up better in the oven and makes the cookies look extra special with its glassy texture.

Molasses Cookies

Ingredients

  • 1 cup softened butter
  • 2 1/4 cups brown sugar
  • 2 cups molasses
  • 2 eggs
  • 2 cups buttermilk or regular milk mixed with 2 Tablespoons vinegar
  • 6 cups flour
  • 1 Tablespoon baking soda
  • 3/4 cup coarse granulated sugar for rolling

Instructions

  1. Cream shortening and brown sugar.
  2. Add molasses, buttermilk or regular milk mixture, and eggs.
  3. Stir in flour and baking soda.
  4. Shape into 1" balls, roll in granulated sugar.
  5. Place balls on baking sheet 2" apart. Bake at 375 degrees for 10 minutes. Balls will flatten as they bake. Store in an air tight container for up to one week.

Molasses Cookie Tips and Tricks

The cookie recipe calls for buttermilk, but as stated you can substitute regular milk with the addition of vinegar or even lemon juice instead. Let the milk mixture sit on the counter a minute or two until it begins to curdle, then add it to the recipe as usual. There is no difference in taste between the ingredients, just use what you have on hand. I am not one to make special trips to the grocery store for just one or two items!

My favorite type of molasses is the full bodied unsulfered, dark molasses. This is the molasses in it’s purest form, rich and nutritious. Look for it in the baking isle or next to the maple syrup.

Biscotti is my all time favorite holiday food. Years ago my friends and I would gather for a special holiday gathering and each year one of my friends would make Hand Dipped Biscotti. She would wrap each piece like a gift and we would relish every single bite until we got more the next year.

I make Hand Dipped Biscotti each year still love it. Our kids love biscotti as well and often help me make it. They eat more than they make, but I love having them in the kitchen. It is a fun family activity.

Here’s what you will need to make Your own Hand Dipped Biscotti:

2 cups all purpose flour

1 1/2 tsp. Baking powder

3/4 cup sugar

1/2 cup butter

1 tsp. Grated lemon zest

1/4 tsp. Salt

1tsp. Vanilla

2 eggs

3/4 cup chopped almonds

2/3 cup dried cranberries

12 oz. chocolate chips

Preheat oven to 350 degrees. Mix dry ingredients and set aside. Combine butter and sugar, mix well. Add lemon zest, eggs and vanilla. Add dry ingredients, combine. Fold in nuts and cranberries. Turn out onto slightly floured counter, kneed slightly. Shape into rectangle, about 3″ wide. Place on large cookie sheet and bake for 40 minutes. Remove from oven, cool for 30 minutes. Cut into slices 1″ thick. Place slices on their side on cookie sheet. Bake again for 20 minutes until golden. Cool completely. Meanwhile, heat chocolate in double boiler until melted. Dip cooled biscotti pieces into chocolate, covering them half way. Place dipped biscotti on cookie,sheet until chocolate has hardened. Wrap pieces individually in wax paper or parchment to store.
