It feels like summer outside. It’s warm and breezy, reminds me of lazy days on the porch sipping refreshing drinks.
Except the grass is entirely brown, and the breeze is a 50 mph wind today. Well, it’s better than snow, so I’ll take it!
I still want a refreshing drink though.
I found a use for all those extra watermelons we had last year. I attempted to make watermelon jelly from them, but it was a bit of a failure.
It didn’t gel at all. I have jars of runny watermelon substance sitting on my pantry shelves. Such a shame, don’t you agree?
I finally came up with a solution.
I mixed the runny jelly with a few other things to create this yummy drink.
Here’s what you will need:
2 -1 liter bottles Seltzer water
1 can frozen Limeade concentrate
2 cups watermelon syrup
(you can make your own syrup by boiling 4 cups cubed melon, with 1 cup sugar until dissolved)
Watermelon and lime wedges for garnish
Mix all ingredients and serve. Makes about 12 servings.
